personally I think shallots mog onions. They have a much more refined flavor that blends into food better than onion.

In the quantities I use, I can't justify regularly purchasing shallot except for specific dishes. Cost per pound is too expensive. If I see it on sale I'll grab a bunch, but otherwise reserve for one-offs. In terms of flavor, it has a slight edge up on onions.

I basically use shallots for things that would require only half a normal onion. I'd rather just use one whole shallot than cut an onion in half and forget about it in the fridge until it is all dehydrated and flavorless.

If I need a shallot, which is just a small, weak onion, I can just use frozen diced onion instead. Indeed, unless I need raw onion or I need a specific shape, I just use frozen onions and add a little extra to account for their weakness of flavour.
