Season everything, mainly with more salt. Season the cutlet. Season the flour/breadcrumbs. Season the egg/milk.

Here's the important bit

Don't listen to this guy, point your cutlets thin, then brine them for at least 30 min in salt water. After your katsu is fully breaded and seasoned, allow it to chill in the fridge 15min or so. This will give the breading time to adhere and stick and won't come off during frying.

Give the breading time to hydrate after applying to the chicken as other anons have been saying, it helps the crumbs adhere and also gives you more time to cook the chicken before they are finished cooking. Brine the chicken beforehand.
