Can some eu bros tell me what the fuck this is ?
Visited my cousins in Budapest a few years ago and near the castle there was this pastry store
It was the most goddamn delicious pastry i've ever had in my life. Some sort of poppy seed strudel, i've been looking for a recipe but can't find anything aside from Beigli which is also delicious but just not the same

I'm fairly sure I saw that pastry shape on an apple strudel on my trip to Austria. It's possible that it's a unique local bakery combination with a poppy filling and you might have better luck looking through common local pastries instead of hyperfocusing on the poppy seed ingredient.

Boil soaked poppy seeds in slightly sweetened water will they are nice and swollen. Discard the water (in time you'll know how much to add so it absorbs fully), blend with an immersive blender like you'd pprepare a hummus or something, adding sugar, vanilla water or milk if it's too dry. Mix in raisins, other dried fruits, crushed nuts, whatever. It will solidify when heated as a stuffing so i tend to make it more moist than most online recipes call for. Kind of a thicker cheesecake batter. Might not go well with a strudel form factor. Enjoy the colour of your shit afterwards!
