Pan fry for cooking for yourself plus a guest. Grill makes more sense for a family. Best would be a griddle to soak in juices while having a lot of space to put meat

A charcoal grill imparts the smell of smoke, which is usually a good thing. A pan gives you more ability to control the juices, since pan searing tends to be easier and better than grill searing (and searing on a charcoal grill is not really an option if you've waited for the fire to cool down to cooking temperature); however, you don't get smoke flavoring cooking in a pan on your stove. I can definitely understand people who do a hybrid pan sear and then place the steak and pan together over a charcoal fire, to get the best of both worlds.

A griddle is shallower, with lower walls or no walls compared to a "pan," which most people say when referring to a skillet. So I don't know how that would be better. The juices would just splatter everywhere.

I've encountered a fair amount of steak-sear snobbery posting here. The fact is that it can be difficult to get a ton of sear and not overcook the meat, especially with a thin steak and when your juggling the steak, vegetable, and a starch all on the burners at the same time. Plus the meat still tastes great even with a light sear, especially if you use a quality cut of meat.

Its not just smoke its the fat drippings falling into the charcoal that make it taste so great. Also its not like you are losing out on juices with a grill. Good steaks will retain a ton of juice as it pools on the top.

Absolute searlets. Bow before the unrivaled flavor that is charcoal grilled. Seriously though, charcoal grilled has by far the best flavor for cooking steak, outside of getting one of those super high temp salamander things steakhouses have. Even then, you're missing out on that amazing smoky flavor. Once you nail charcoal grilling, you will never go back to any other method. Unless it's raining and you dont have an awning, I suppose.

Recent nutrition research shows a link between unbalanced omega-3 to omega-6 fatty acid consumption and negative health outcomes, like obesity. I am not an expert myself, but for fuck sake, it's not literal poison, but it's not a meme. It's the same kind of thing with sugar, or high fructose corn syrup. A little won't hurt you, and a lot isn't going to kill you quickly, but a lot over a prolonged period of time will probably make you fat or diabetic.

Grilled looks nicer and can add a flavour from the charcoal. It's a way to char the outside and not have a crust. You can also put a coating on it like a cajun spice mix or something.
Pan seared gives a crust, which is more texture.
Problem with pan is that you can't really put a coating on it or you'll likely burn it.

Best of both worlds - grilled DIRECTLY on the charcoal. No grate, no pan.

If anyone wants to try:
Get the charcoal red hot all over, get the steak up to room temp. When ready, blow strongly on the coal. The reason for this is you don't want the ash on the steak so you blow it off. Then place the steak directly on the charcoal. Don't turn until one side is ready. If the coal goes dark under the steak, move it (don't forget to blow off the ash from the spot where you want to move the steak).
Cook from both sides, use a steak thermometer if you can. From medium rare you want something around 54 degrees celsius (130 fahrenheit).
When turning the steak, remove any coal that stuck to the already cooked side.
What you get is a steak with perfect sear AND the charcoal flavor.
I know this sounds like a bad idea and you might think the steak will burn to shit, but it won't. This is seriously probably the best way to cook a steak.
