What can I throw into chicken soup for more variety? Right know I can only think up potato, carrot, and mushrooms.

Beyond the obvious being making your own stock while you are at it you could render the chicken fat and use it to brown the chicken before stewing it
Anise, anise goes really good with chicken and pork
Fresh herbs are good but don't use parsley as it would be too invasive for chicken soup
You could replace pasta or dumplings with roasted chickpeas which would be healthier and more savory. Here is my recipe for roasted chickpeas
For about 200 grams of cooked chickpeas
2 tablespoons of olive oil
3 tablespoons of butter
Oregano
Parsley
Garlic, use dried garlic as it will stand higher heat
Cayenne or your favorite hot sauce
Black pepper
Half a spoon of mustard
One tablespoon of peanut butter
Sesame oil to taste
Just don't add it to the soup, add it to your bowl once the soup is served

Parsley is awesome in chicken noodle soup, especially next day. Just don't use a ton of the stuff. I like to make a whole wheat noodle with black pepper and parsley and add that about 5 min before everything is done.
