I dont know, most of that has tomatoes or chiles in it and all are native to the Americas. Plus nobody can go anywhere in Italy without being harassed by gypsy whackjobs.

My older brother told me about a trip he took to Italy with his wife and bottom line it all about gypsies harrassing them, that's just not appealing to me.

Italians are weird. They will always insist that the Italian version of [thing] is the only real version and is so superior than how everyone else does it that they wont even eat Italian food that wasn't prepared by Italians. But if you get 10 Italians in a room and ask them how something should be prepared they'll all give completely different answers. In reality they're kind of like picky children, and their idea of "authenticity" just means the way their grandma made it. The French are kind of the same way, but about everything and not just food. If you actually spend any time with them you'll quickly find out it's just an annoying cultural trait where they have to act like they're right about everything all the time, even when they themselves are well aware that they have no fucking clue what they're talking about.

indian cuisine is about complexity and mixtures of many different spices
italian cuisine is about simplicty. when you tweak one ingredient of an indian recipe, you're altering 5% of it. when you tweak one ingredient of some italian recipes, you're tweaking 25-50% of it

hell, i've even seen americans argue about how you should call it a "melt" when there's more than just cheese and butter on it
just stop worrying about it, some named recipes are rigid with their ingredients, some aren't. it's not a travesty. and italians will freely say you can substitute ingredients that are hard to find outside of italy (like for example it's okay to use bacon in carbonara, you just need a fatty piece of cured meat)

You think they're bad? Mexican food elitist are the worst. The whole cuisine is basically junk food and they defend it like it was high art.

Chinese food in China is in no way the same as it is in the US, I have been to both places.

It is not being about snobbish, but when "bottom-feeders" like the US try and copy your food and do it poorly, this is where this comes from.
