I've been to French Laundry and Le Bernardin, would have been to a third but it turned out to be closed the day we went despite our reservation being greenlit months in advance.

I've eaten at a 2 star and 3 star place. I thought the 2 star was overall better since it included a stay in the hotel and truly luxury experience. Here were the highlights:

>picked you up from the airport in a luxury car
>asked what sort of bedding you preferred before your arrival
>room came with fresh fruit, wine, nuts, bottled water, and you could take any of the books or things you liked with you.
>drinks and amuse bouche in the garden
>7 or 8 course menu with wine pairings
>drinks and coffee after in the study
>they shined my shoes before dinner since they had been scuffed up
>they organized private activities that were actually really reasonable to partake in. Classic car rentals, fishing excursions, falconry in the orchard, etc.

I dread to think how much money that adds up to. Most of these were dates with my wife but there is the occasional business meeting in there.

Now that I have kids, we very rarely go out to Michelin star restaurants as it is hard to justify the consooming. The most recent was Gabriel Kreuther before seeing a play on Broadway (Leopoldstadt).

My overall view is that *** and ** places can be overpriced and a bit soulless at times (but not always). I'm not really interested in all the bullshit food theatre you can get at some of those places. There can also be a typical consoomerist fight to secure a reservation, which is really just quite tedious.

Nowadays I tend to prefer * restaurants as they are often more low key (and better value).

I went to a one-star restaurant in Germany and a two-star restaurant in Vienna Austria (Steirereck). This is actually genius since it's poking fun at all those people who act like gourmet masters but cannot even cook an egg. Funny story, an acquaintance of mine who owns several restaurants told me about that time he was invited for dinner by a food critic (and yes, he admitted that it's better to be friends with them so they give you good reviews, awards etc...) and she couldn't even cook an egg (she also admitted to it lmao) so they had food delivered to them... Just goes to show that awards don't mean much and you should think for yourself when visiting a restaurant. Moreover imagine being judged by somebody who has no experience in your profession, I think Marco Pierre White has talked about this in length, saying that he felt that he shouldn't pander to these people since they don't even know how to cook.

Sometimes I prefer to be judged by those who can't do what I've done for their enjoyment. When I can make a meal or (re)create a piece of music, or design a tattoo that's so far beyond my victim's experience that it's like pulling off a magic trick - that awed "HOW?" no matter how it's worded - that's a great experience for me. Yeah he's my favorite chef, he taught tons of other really famous chefs and his story is pretty sick. Also he seems pretty nice, I was there for my honeymoon and apparently he normally likes to congratulate people personally when he's there. He wasn't around at the time, so instead they gave us a free upgraded suite to one of the nicest ones on the property. The service and treatment was pretty remarkable. I've dealt with them... I've cooked for them (thankfully only as sous or saucier). I've even edited for them. Some are absolute ogres, masking their cigarette singed palates with unkind words and unacceptable demands. Some are actually pretty decent people - decent despite/because of honesty. The only time I've been fired from a job is because of a slop of sauce on a critic's plate. If you're going to fuck something up that you've done a million times, it's going to land on the plate of someone who can reach a million people.
