I'll start: I want to make boeuf bourguignon and coq au vin. I don't eat pork. Can I substitute beef tallow, lamb fat, or butter?

Why not just make an exception this time and pick up some good pancetta? There's not even that much in the dish, and if you're willing to eat beef and lamb there's no real reason not to eat pork.

I do have a question today.
Yesterday I made this recipe. It is a sauce that is spices+yogurt+water mixed in with potatoes, hot peppers, and allowed to simmer.

But the consistency of the sauce is weird. It should be smooth but instead it ... clumps(?) and forms little grains/clusters. How do I fix this?

I am wondering about that myself. The dry ingredients mixed with the yogurt just fine. And that mixture mixed with the water quite well also.

The recipe is basically
>Heat fennel seeds in oil in a large pot
>Make yogurt sauce
>Add yogurt sauce to the pot
>Add in potato and pepper and let simmer

It seemed to be going well until the step where I added the sauce to the pot. I had let the pot with oil and the herbs go for a bit long and when I added the sauce it like insta-boiled at first bc the cooking surface was so hot.

I was writing this post and went to take a shit and I looked it up and it kind of looks like what happens to yogurt when you heat the milk too long.
So the heat was probably the culprit

most likely yeah. next time I suggest doing the same as you would when making a custard. add some of the heated milk to the egg mixture and mix until the egg mix is close enough to the temperature of the milk.

I don't have the source, at least other mashups have some sense. Like in LA, the NYC Jews who opened restaurants here often have weird menus including pizza, falafel, and pastrami sandwiches but at least it's not all in one dish.
