Last night I got sick and had a fever of 40 degrees and vomited up my dinner.

My dinner was some Korean fried chicken and rice. I'm wondering if it was the chicken or rice that got me sick.

I had washed the rice and let it soak for 48 hours in my rice cooker but when I went to cook it, the rice smelled a bit "off" and there were some small bubbles in the pot which i don't usually see. What did I do wrong Anons?

if it's white rice it's fine, it should be safe for a couple of days (3-5) outside of the fridge. Wild rice however, will spoil in a day or 2 so it's better to put it in the fridge.

So I did a bit more googling and it's not recommended to soak rice for too long, especially at room temperature (which is what I did):

cooked rice at room temperature is prime breeding ground for bacteria/fungi

even rice that's been sitting at room temperature for 2 hours is not *safe*. you probably won't get sick from it, but you're accepting an increased risk of foodborne illness by consuming it.

obviously there's a lot of microbiological variabilities wrt your geographic and home environment, but in general you shouldn't eat rice that's been left out, certainly not if it's been left out overnight.

put your leftovers in a covered container and put them in the refrigerator as they approach room temperature.

you can even put hot leftovers directly into the fridge, contrary to popular assumption. your fridge will run more frequently to cool it down. the risk stems from the possibility of the hot leftovers heating the surrounding food into unsafe temperatures. you can minimize this by putting small amounts of leftovers into the fridge or by partitioning large portions into smaller containers, as a single large thermal mass will take longer to cool than a bunch of smaller ones.

Holy shit you guys are pussies. 2 hours rice unsafe...I like the next day rice when it has dried a bit and actually leaving it uncovered is better for that. When covered it can start maceration faster.
I even eat 2 days rice when it's well dried and not smelly (not in full summer obviously). It becomes some sort of onigiri I guess. I'm just a European cooking it in a pot until the water is gone and have no idea about rice cooking techniques.
