I grew up in California and did this as well once. Cooked a huge batch while camping with friends, absolutely delicious and no effort to harvest.
Only later did we learn that we got lucky as hell, because for large parts of the year you're likely to die soon after consumption from neurotoxin(s) they accumulate. We harvested right around the transition point, but all went well.

The settlers considered them trash food because lobsters were so plentiful that they would wash up on the beach with every wave.
You have to remember that the settlers were religous extremists and had all sorts of weird hangups about food. Salmon, for example, was considered absolute trash because it could be fished in any river back home for free and without tax. Only the poorest of the poor would suffer the indignity of eating salmon.

Once the colonies were more established and the rich started to vacation here, lobster was an exotic delicacy and every expense was made to export it back to the motherland.
This included canning, and a lot of second rate canned lobster was indeed fed to prisoners. Prisoners did complain about this as inhumane, but that is because they were eating canned lobster for every meal, every day.
