A good avocado is really delicious. Most avocados are fucking trash and should be chucked as hard as possible at the hipsters that push them just because they're trendy. It's just like most modern fruits, only worse.

1) Processed cheese. Anyone who puts processsed cheese on a burger should get a firing squad. Unless you're a wagie at a fast food place, there are no excuses for doing this shit, ever.

2) Fried eggs. The sulfur taste of the yolk and the texture of the eggs clashes with the rest. If you made a thin omelette and folded it and put it on the burger that could work for a breakfast burger, but that's about the only reason I can think of.

3) Olives, marinated artichokes or pickled peppers: They're fucking great, especially in sandwiches, but they're too wet and don't pair well with other ingredients.

4) Any kind of weird shit mixed into the ground beef used to make the burger patties. The beef should contain only beef, and perhaps salt. MAYBE you can add black pepper. MAYBE. If the beef is getting old then crust it in garlic powder to mask the taste a bit, but that's only if the beef is on the edge of inedible. Don't drown it in a ton of butter or oil. Put the patties in a little oil to start with, but let them cook in their own fat.

5) Non-western spices/ingredients. Anyone who adds weird goop like gookchang should be given a free helicopter ride.

6) Excessive grease or sauce. I don't like a slimy burger, fuck off with that shit.

7) Fake meat. I don't need to say anything else.
A burger can contain any kind of meat, but it should have meat. Not sure what to call Portobello burgers.

8) Foods which are generally incompatible with the structure of a burger, or which don't pair with burgers well. Overly sweet things, for example. So, no donuts or strudels.

I can't think of anything else, is that a good list?

I hate this "lifehack" with an undying fucking passion. I am convinced people doing this is 100% to blame for fast food restaurants never salting their fries appropriately any more. Instead of getting nice salty fries with salt melted right into the oil as it dries on the surface of the fries you get bland saltless fries that you have to try to add salt to when they're already dry and cool, it doesn't taste the same. When I started making burgers at home I realised how little you actually need to make a good burger.
Lots of toppings just overcrowds a burger, makes it sloppy and unstable, you honestly just need 1 strongly flavoured topping.
My top is:
- jalapenos
- pickles (salt ones not vinegar)
- olives (green)
- NO KETCHUP, literally anything is better, I usually like weird shit like remoulade, but even mayo or a generic burger sauce is better than ketchup.
I don't even use cheese sometimes because i can't even taste it in the burger. Unless i use something strong. Irish cheddar actually worked well.
I should try to make the OG too, mustard, onions and meat. That's it. Should be tasty.

Unless you're grinding the meat yourself in sanitary conditions, you're putting yourself at a huge unnecessary risk. Rare is fine for steak since all of the bacteria is on the surface, but once you grind the meat all of that bacteria is distributed throughout the meat. You can't treat ground beef the same as steak.

I'm not proud of the fact that I've cooked a thousand burgers, but it's part of the job when I'm working the grill, and I can assure you that when I have a $70 steak on the grill next to a $14 burger I'm going to cook both of them exactly how they were ordered. And that's what 99% of all line cooks are going to do. Sometimes mistakes are made, and if it's really busy we'll send out something that was ordered medium rare when it's closer to medium well, but usually we'll poke our head out and/or ask a server if it's a regular like (you) who thinks it's all the same and cross our fingers that we don't get a complaint (and I almost never get complaints).

It depends on the restaurant. Chain places like Red Robin will ask how you want your burger cooked and then just cook it the exact same way no matter what. I always find it funny because it seems like you'd be less likely to get complaints from people if you just didn't ask and they just had to accept the standard doneness.
