Personally I mostly eat pork. It's cheap, marinates well, fries up nicely, roasts up nicely

Lamb is more difficult and expensive to farm, can't be factory farmed I think, and the animals are themselves relatively small. A half leg of lamb is like £15 which is the price of 5 whole chickens.

I think pork is a lot more flexible than beef. I basically only use the latter for steaks and hamburgers or chili. But pork I use for tenderloins, stir fries, lentil soups, curries, etc.
