Around 60% or more hydration, im blending bread flour and whole wheat rn cause I like the consistency and I'd like to think it's a bit healthier. I put my flour in with a good bit of yeast, bit less sugar, salt, then put in water and olive oil and knead.
Don't really measure or anything just have a sense after a few tries how much of each.
I had been working on my dough a couple years ago but I just started running the pizza stone and it has changed the game entirely.

Also began experimenting with my own sauce. Amazingly found d.o.p. certified San marzano tomatoes in my small town grocery store. Did a simple neapolitan with uncooked sauce to get a real taste for them and was really impressed.
Going to try cooking next time.
For seasonings you can never go wrong with lots of garlic, whatever generic Italian seasoning, and crushed chili flakes for heat. Plus obviously salt but always account for how much is in each component (ie in your dough, how much olive oil you use, and the glutamate content of your toppings).
Parmesan under the mozzarella, parm has glutamate, mushrooms if you use those. You can even put msg into your dough but I haven't got any on hand atm.
Pizza is very personal and cooking your own and experimenting is the best way to find what qualities you really like in your pie.
