Great video overview speed-running the cocoa and chocolate making process, however I do wish he would have pointed out at the end how the different pH values of natural vs. dutched cocoas react with base chemical leaveners like baking soda in recipes to drive home the point that they are NOT interchangeable. If a baked good recipe calls for dutched process cocoa the neutralized ingredient won't generate CO2 for lift unless the recipe replaces the acidic component with something like espresso powder or brown sugar for example or more frequently employs double-acting baking powder in place of the soda to ensure the reaction still occurs.

Moreover, I really would have like at 6:00 into the video where he demonstrated the extraction of cocoa butter from the cocoa mass and leaving behind the solids for generating cocoa powder to mention that there is a wide spectrum of processing discretion at this stage by the manufacturers resulting in a huge range of residual fat content between brands and that extracting the most high-margin fat makes the most profit for the companies but leaves the resulting cocoa powder nearly completely pure starch (insanely hydrophilic). That is bad in baked goods from both a flavor (because fat carries flavor) and textural point (starch absorbs moisture like crazy and can leave the end product dry and tougher than you'd like as in "bad" brownies). He could have even repeated the demonstration Jack Bishop at America's Test Kitchen did here to drive the point home:

Finally, if Adam had wanted to stick with science content he could have reminded viewers that not only is the cocoa powder made up of starch granules that are hydroPHILIC, but they are bound up in fat molecules which are simultaneously hydroPHOBIC which is why stirring cocoa powder into cold milk never really wants to mix and stays in intact dry clumps. But if you heat the milk solution first like when making hot cocoa the higher temp melts the fat molecules allowing direct interaction with the thirsty starch part of the powder for easier emulsification.
