Preserves = umbrella term for jams, chutneys, pickles, and relish

Jelly = gelatin based foods. Also a very broad term. Without context it would presumably refer to what Americans call "Jell-O" (unless you yourself are an American, in which case shut the fuck up because even the name "Jell-O" is a tacit admission that it's supposed to be "Jelly"). Jelly can also refer to certain lollies, sauces, and spreads, the main thing is that they have gelatin, hence mint jelly, aeroplane jelly, jelly lollies.

Jam = a very specific kind of preserve made from the flesh of fruits, it can be made from alternative ingredients (see: bacon jam) but ultimately it's called "jam" merely as a colloquialism; because of the similarities it has with preserves made from whole fruits. Purists may insist jams can only be made from sugar, water, and the flesh of certain fruits, and that even the inclusion of the fruit's rind is enough to make it not a jam, but a marmalade.
