There's some cases where I've noticed a big difference -- one recipe for a Japanese vegetable fry (daikon I think?) specified taking the time to brown the ginger in the pan before working in the other spices and sauces. That definitely made the nutty aroma coming through the sauce very different from a similar sauce with just ginger tossed in that I had made the previous day.

AmericasTestKitchen's pumpkin pie recipe uses fresh about a tablespoon? I think of fresh ginger instead of whatever amount of dried, and pried theirs on not tasting "overspiced" -- I actually think that makes a big difference. I wonder however if browning the ginger in a pan beforehand would change it much next time.

I agree -- half the curry recipes I see online omit ginger. That said, I usually add it anyway, since it has nice nutritional value, it's not terribly tough to prepare, and you can buy a big bag of the little rejected chunks at a discount from the local grocery store, which I can't use fast enough anyway, so might as well just burn it when I can.

Besides planned obsolescence sort of mercantilism, I don't know why they still haven't added a more rubbery plastic or dense silicone layer at the front of the handle fill to absorb some of the shock before it gets to the harder plastic.
