Hams are a central piece in the UK too, although you'll want a bird to go with it. We usually do cockerel or duck or goose plus a ham, although I think my parents have got bored of poultry and are doing shit like venison instead for a few years. We're going to France this year though so we might just buy shit from a traiteur.

Captain Cook (of Hawaii fame) once said that a goose is a ridiculous animal. Too much for two people to eat, yet too little for three.
Then again, they didn't have refrigerators back then.
While I've never eaten goose, I've met plenty of live ones, and they are (without exception), gigantic assholes.

I've done smoked goose. I put a pork butt directly underneath it in the smoker, so all the goose fat drippings would baste the pork butt. It was fantastic. Goose drip fat like crazy.
