I don't like the cooked kind, I make the relish in a food processor with fresh cranberries, granny smith apple, orange, lemon juice/zest, and sugar. It's much better that way.

It looks like he does add pomegranate, I don't. Also I don't think cooking really effects the bitterness of the cranberry much, what effects it most is the amount of sugar you add. I don't add very much because I like things bitter but other family members don't so I have to make a separate batch for them where I add more sugar.

I'm making note of this. Cranbreeze are pretty hard to find in my country but I love them (grew in MA and we had that shit growing wild around the house). If I find fresh ones for an affordable price I'll use half to make some sauce but then the fresh relish seems like a great summer garnish. I'm even thinking possibly with öysters
