i salt before, on steak and pork chops at least
i used to have this honeyed aleppo pepper powder i got at TJ maxx that would caramelize and give a great crust to steak

Salt the meat when you take it out of the fridge, and let it sit as it comes up to room temperature. Then pat it dry with paper towels. This will remove most of the salt, but will allow the meat to form a better sear as it cooks. Then taste a little piece of it and re-add salt as needed.

If you cook pepper really hot, it can burn and leave a bitter taste and destroy all the aromatics. Put on fresh ground after cooking for extra punch.
