A 19 year old girl on birth control is coming over to my place tonight, from the suburbs, so I'm making some Zoupa Toscana. The original inspiration was because I kept thinking I was out of parmesan whenever I went to the store so now I have 2.5 canisters of the stuff and apparently (I'm using my friend's signature recipe) it uses a whole fuckton of the stuff.

This is one of my favorite creamy chicken soup recipes.

8 boneless skinless chicken thigh
8 oz white or brown mushroom, chopped
1 yellow onion, large, chopped
3 garlic cloves, minced
3 celery ribs, chopped
3 carrots, chopped
3 waxy potatoes, medium, chopped
3 tbsp evoo
3 tbsp flour
6 cups chicken stock
1 tbsp salt (or to taste)
1 tsp black pepper (or to taste)
1 tsp dried thyme
1/4 cup fresh parsley, chopped
1 cup frozen peas
1 cup frozen corn
1/4 cup sour cream

1. Add the chicken thighs to 8 cups of water with 1 tbsp of salt. Poach them on medium for 30 minutes then set aside to cool. Once cool, shred them into bite sized pieces. Reserve the stock.

2. Add evoo to a pot and with the mushrooms. Once the mushrooms begin to sweat, add the onion, celery and carrots to the pot. Once onions are translucent add the garlic, thyme and pepper. Sautee for another 5 minutes.

3. Add flour to the pot and cook it off for another minute, then add reserved chicken stock. Bring to a simmer and add the potatoes. Cook for 30 minutes or until potatoes are tender.

4. Add the chicken, frozen peas, frozen corn, sour cream and parsley to the pot. Cook for another 15 minutes until the frozen vegetables come up to temp.

5. Taste for additional seasoning and adjust thickness by reducing or adding water then serve.

Hot and sour soup. I tried making it myself, and it turned out really good, but I was very doubtful every step of the way. The mushrooms and lily flower smell very musty while rehydrating. Then the bamboo shoot smells not unpleasant, but kind of weird and lingering. Then the soy sauce and white pepper and stuff goes into the chicken broth and that smells funky. And the tofu is kinda bland and rubbery. But then, after adding the vinegar and egg, I gave it a taste and was very relieved - it tasted just like from the restaurant.
If anyone wants to try it themselves, I vouch for the Woks of Life recipe. Although if you like heat, I would recommend adding more white pepper than they suggest. I added like 2 or 3 times what the recipe calls for.

Vegetable Beef Soup that I make in a huge pot and eat for the rest of my work lunches. And when I say Vegetable I mean Vegetable (tomato, green bean, pea, onion, potato, garlic, carrot, celery) practically anything I can shove in there. It's sometimes hit or miss between the Peas/Tomato's/Potatoes though, I've found that if you use Tomato Soup as a base sometimes the peas or potatoes end up not working together, but if you use beef broth and hole peeled tomatoes instead they play more nicely together.

Simmer a little more and mix in a fuckton of kale. You can see this is a loose recipe without much in the way of measurements, but you're gonna want to add as much greens as you can to absolve some of the guilt of just-how-indulgent all the other ingredients are.
By now the stuff should have been simmering long enough to cook the potatoes. Greens always go in last but kale is actually pretty robust, so you can keep the heat on for another minute or two after adding it without it wilting too much, how much you want it wilted is left up to personal preference. I like mine a bit more "al dente".
I also used pre-chopped kale with the stems on out of convenience, if you were gonna chop your own fresh you'd obviously remove those.

A pain in the ass, but worth it.
Ingredients
500g smoked pork ribs
1 celery or parsley root (optional)
2 large onions
2 carrots
500g sauerkraut
2-3 potatoes
1-2 tbs of tomato paste
bouquet garni (dill, parsley, bay leaf)
Salt, pepper.
Recipe
1. Sautee one onion, 1 carrot, and tomato paste.
2 Mix sautee with sauerkraut (with liquid!) and put it into the oven preheated to 120C for 4-5hrs. Lower the oven temp by 10C each hour, add water if needed.
3. Make broth - simmer ribs with onion, carrot, root and herbs in 3-4l water for 1.5-2h. Salt and pepper up to taste.
4. Remove meat, vegies and herbs from the broth. Separate meat from the bones, finely chop it.
5. Mix broth, meat, stewed sauerkraut and potatoes. Simmer until potatoes are ready.
6. Let soup cool for a bit and put it into a freezer for the night.
7. Defrost and heat up. Add sour cream.

I don't know what kind of soup I'd call it. Leftover soup? Beans and everything? It's a little different every time. Ingredients are things I need to use up that I got for other meals. Its always dry beans and seasoned spicy like creole cookin'. The soup is so good though its one of my favorite meals. Good over rice and with cornbread. Real hearty and good for ya too.
