I'm baking 6 loaves of bread today. Doing a bunch at once and freezing it has been working out well.

For the first batch I let it pan rise in a cold oven with a pan of boiled water for 2/3 of the rise before I need to turn the oven on. I can't do that for subsequent batches so I'm thinking of using the dishwasher as a proofer, just need to make sure I don't put dirty dishes in it before I bake.

the main reason bread gets stale is because the starch crystallizes; this has nothing to do with how dry the bread is or whether it migrates like the proverbial swallow. the starches crystallize and the bread gets stiff and feels dry even though it isn't. heating the bread up above about 140F causes the starch to re-gelatinize.
