Mexican has both european and Japanese influence so by default it mogs both. too much variety. at least in raw dishes it is undefeated.

I like them all but if I had to choose one it I would probably say the seafood from Ensenada since it's bascially an upper scale version of Sinaloa style cuisine. There's still some good gems from southern coasts though like coconut milk and chile fish, and fish head mole
