cook with added coconut milk. It absorbs a lot of the fat and gives it a curry-like flavor. I did this several months ago for the first time and haven't had rice without it ever since.
Chicken broth can also be added to the water you cook it in. Just remember, with both of those added liquids, you'll still want to use close to the same amount of water as normal and then stir the milk/broth in.
If you don't want to be all fancy you can just cook it with garlic, salt, and pepper.

colombian that I know adds a glug of corn oil to the cooking water, and dried onion flakes and it's pretty delicious. I use read diced onion (or a clove of garlic), and olive oil. Mine doesn't come out superior, oddly enough. Their version is better.

I like many verions of super chili crisp, including one by Don Chilio habanero, as well as the 7 spice blend from McCormick, alternately.
