Beef is the healthiest meat; much higher possible fat content, much more complete micronutrient profile. On top of all this, chicken has a lot of histamines due to the typical diet of a chicken and their small digestive tract not filtering them out properly. Ruminant meat is much better in this regard due to multi-stage digestion that eliminates histamines much more thoroughly.
