Honestly there are so many great cheeses in Western Europe that it's almost impossible to pick one. France, Spain, Switzerland and the Netherlands tend to have the best ones, but again, this is almost meaningless, because there are great cheeses elsewhere too and because France and Spain just have so many varieties of cheese that some are meh and some are fucking masterpieces.

i have never been able to get it to be that gooey when baking. at this point i'm convinced i have to sous vide it or something. it always bursts before it gets to this point. i've even tried putting it in a cold oven and then turning it on so it has more time. still did not work as good as this pic.

Overall, it has to be cheddar. Extremely versatile, good sliced or shredded, melts well, enjoyable cold sliced as well.
