This. Turkey makes for a pretty good chili meat. I also use turkey for makings tacos/Mexican foods in general.

Today I stuffed a tomato with mashed turkey mince and onion, then I made a sauce with the innards and ate it with jasmine rice. It was ok but I beat an egg into the mince and it became too homogenous--like it came out of a can. I think frying it for cheese ravioli or making a wrap would have been better.

you can make great taco meat with ground turkey.
for 1 pound of meat-
1 small yellow onion sauteed
1 tbsp cumin
1 tbsp paprika
1 tbsp chili powder
1 tsp salt
1 tsp black pepper
1/2 tsp oregano
1/2 tsp garlic powder
1/2 tsp cayenne

mix in spices, about a tbsp tomato paste and a couple ounces of chicken broth.
once the turkey is cooked, simmer for 20 minutes

Literally anything that you would use minced beef for. Even if you wanted to make a spag-bol it still works kind of nice.

I get a packet of turkey mince every few weeks and make up and cook a big batch of ~marble-sized meatballs and keep them in the freezer and just pick out a few to throw into whatever I'm making as a little extra until they're gone

they're prob not going to change your entire way of cooking but they're a nice bonus

I like it as a change from ground beef in spaghetti sauce. It also makes excellent stuffed pasta and pastries if you wanna get fancy.

Finely chop up an onion and a chili pepper, take a handful of crackers (flavoured ones if you prefer) and crush them to dust in your mighty hands, break and egg, combine all with the ground turkey, season with pepper and salt, roll meatballs.
Then boil some chicken stock, drop in the meatballs and take them out once they remain floating. Boiling them beforehand is a neat trick to prevent them from falling apart when frying.
You can just fry or deep fry them afterwards. Leftovers can will stay good for quite a while.
