We do, and I've had poutin in various states, but OP is being honest somewhat. You really need to go to a Northern state near the border and hit up some dinky little diner or hole in the wall joint to get the good shit. There is a difference, and as illogical as it is, Canucks just do it better. I've no idea how, but I like to think it's just some good il TLC that makes the difference.
Poutine is one of my comfort foods.

I made Chef John's Stifado (which makes an absolutely stunning beef stew) and used the leftovers to make poutine the next day. It was incredible, I've never had such a rich beef gravy in my life, my wife now demands Stifado every time the weather starts to get a little cooler.

you have to take a long drive out of the city and into the hills. there you will find The Creamery. At The Creamery you can buy a quart (1L) of milk for $6 or a small 4 oz (115g) tub of cheese curds for $8. It's hell here. We are not the midwest.

I made poutine a few months ago when I got my hands on some legit fresh cheese curds. Flavor-wise I really liked it, gravy+cheese+potatoes is delicious, huge shocker, I know. But the fries turned to soggy mush after a few minutes. This is resolved by simply keeping the gravy in a separate dish and dipping a fry+curd combo as needed.

It's a wonder how I figured this out within a minute the first time making and eating it, yet Canadians still prefer the sloppa form.
