Recently had a few Bakewell Tarts at Brewhemia in Edinburgh. Raspberry gin, orgeat, lemon juice on ice with edible flowers. Very girly/gay but often the best cocktails are.

The last time I went for proper fancy cocktails was at The Balmoral Hotel where it was an eye watering £16 minimum for a cocktail. They were quite good but I have had better. I had a Moscow mule and a few champagne cocktails.

Yacht Club to start. Super chill vibes, awesome drinks, nice glassware.
Death and co - not as good as NY, but still awesome.
Occidental - super laid back but banging cocktails
William and Graham - next door to occidental, super posh and fancy date night place
Nearby is doing the whole Atta Boy nyc thing where you don't get a menu and they just walk you through a drink order. It was pretty good.

There are a few others I'm forgetting because I was drunk.

Sounds pretty gay. Here's how my usual experience goes:

>you notice they have a rare fernet, you order it neat to start
>order something good off the cocktail menu, the bartender happily makes it for you and tends to the 30 other customers.

My go-to is the necromancer, which is a corpse reviver with extra absinthe.
Not sure why people think these are fancy though, they're the cocktail equivalent of sloppa and were made as a hair of the dog to get hungover drunks to get back into boozing again.

10/10, very delicious. If you don't like absinthe, you'll hate it though.

The best cocktail I ever had was a blue hawaiian I made myself using one part pusser's rum, one part blue curacao, one part cream of coconut, two parts Dole pineapple juice blend iirc. Just blend it with crushed ice and garnish if you want. It's easy, and I guarantee it will be better than anything you can order from a restaurant or cocktail bar (probably because of all the sugar kek).

Honestly no offense, but I laughed at you thinking these are fancy. You're free to like whatever you want and there's nothing inherently bad about your drink choices, but long island iced teas are about getting as much liquor into you as fast as possible while it stills tastes fairly good. They have a reputation for being one of the trashiest drinks you could order. Amaretto sour is a little better, but ordering it with ginger ale kind of outs you as low class. Not that there's anything wrong with that. I wouldn't order a paper plane or last wish at a dive bar.

My criteria for fanciness of a cocktail is complexity and difficulty of creation. That's why I consider amaretto sours to be simple as opposed to fancy, since they're piss easy to make. Meanwhile the vast majority of times I've ordered a long island ice tea the bartender failed to make it well enough. Clearly it's too fancy for them.
