Cheddar is the most neutral, basic cheese, that is okay on anything and best at absolutely nothing,

it's only so popular because of how harmless and relatively cheap it is and you can put it on any sandwich or whatever the fuck else you would need a basic cheese for (not counting recipes that require SPECIFIC cheeses with a certain taste and consistency like mozzarella or ricotta.)

But even among that mediocre harmlessness, it's still not the best kind you can use and something like Comte or Gouda beats it in just about anything you'd use cheddar for.
That is as long as you don't have the palate of a 10 year old child like OP seems to.

Have you tried cheddars that were aged longer? Cheap cheddar is pretty mild and can be used with plenty of things but you can also get cheddar that was aged long enough to become crumbly and much stronger in flavor.

They usually add annato or some other coloring too. But most American cheese is white without the color even though it's full fat. Apparently that can also be because the milk is usually from grain-fed cows, and cheese made from grass-fed cows will naturally be more yellow.
