these are pretty good and piss easy to make, I've made persian lamb shanks and lamb vindaloo but the skewers are the best. Cumin, chili/cayenne, salt, MSG, veg oil. Maybe a few sesame seeds. Then grill. Fuck I want me some lamb skewers now.

It’s great. Certain local Middle-Eastern food parlors sell extremely nice halal lamb. Recently my father went to buy some for my birthday and apparently the clerk fetched half a fucking animal from the backroom and hacked it into ribs and whatnot on the counter. Was delicious.

Biggest problem with a lot of places where the cooks are unfamiliar with lamb, they think it's like pork, so they dry the fuck out of it.
It should be prepared like beef, instead, but good luck asking them to keep it a bit more rare. They're still likely to cook all the moisture out of it. It's very important for lamb/mutton to remain moist, since it's stringier than beef.

I never liked it, but I got some lambs and for the last few months it's the only meat I've been eating.
What to you do with "less desirable" meats? I usually give the heads and necks to my dogs and do meatballs with the scraps. Never tried kebab yet, any good recipe?
And most important, what the fuck do you do with so much fat? I trim all I can because it has too strong flavor and I can't get used to it, but there's so fucking much...

I can get a whole lamb slaughtered, processed into various cuts and ground, and delivered to my door for ~ $14/lbs, which comes out to ~ $500. This also grass-fed, pasture raised and all that.
idk if this is good, but its what I found from a small local farm.

The stuff I used to see in grocery stores would probably be about the same price, just not the whole lamb all at once, but this would usually be shipped from Aus/NZ iirc

I have a stand alone freezer (about a $1000, but you can find cheaper, smaller chest freezers) that I keep it in. When its processed they package things up so that its basically like going shopping, just pull out what I think I'll want in about 2 or 3 days and let it thaw in the fridge.

I'm not a huge fan of offal and the like so I end up frying it up for my dogs, but I will sneak bites here and there when it done cooking.
It is expensive up front, but one lamb can bring around 25-35 lbs of meat (half side of beef brings about 100-130 lbs) so it lasts alot longer than you'd think.
And people at the farm are usually pretty cool and down to earth, willing to work with you on types of cuts and stuff.

I was watching videos of Uzbek cuisine and apparently they bred a special type of sheep with ridiculously massive asses, and they render the fat from it for cooking.
