Is this actually safe to eat?

So I've seen Germans and Poles shill Steak Tartare as some super tasy food. I never tried it because I'm afraid of getting PARASITED or getting salmonella. What are the chance of getting infected?

I'm 43, I've been eating raw beef (steak tartare, blue rare steak, carpaccio...) for my entire life and I've never had any health problems. If you live in a first world country and you buy your meat from a reputable seller, the risks are very low. If you want to be extra safe, trim all the external parts of a beef slab with a knife (that's where the potentially harmful bacteria are) and then grind it yourself at home.
You can save the trimmings and use them later for a cooked recipe, like bolognese sauce.

Raw food absolutely can be made to be safe, even if it isn't completely safe to begin with. Flash freezing for example can kill any parasites, and freezes the meat so fast that it doesn't effect texture or taste in any meaningful way.

I've worked in a meat processing plant and if you saw the way they treat the refuse meat that gets turned into mince you wouldn't either.
If you bought a steak and gave the outside a quick sear and then minced it yourself there's basically zero risk though.

Germany has got very strict food regulations. You better research the laws of your place - I highly recommend not to eat uncooked beef in the US.
