What are some "cheap" but tasty meals for 1 individual living on their own to make for dinner?

Getting sick of eating chicken legs and pasta.

I don't know about you but I still routinely see chuck roasts on sale for $3/lb so a good beef stew isn't too expensive. Perfect bachelor food as well, as besides the prep, it cooks itself and it only tastes better the next day.

Cut up sausage and some veggies. Put on top of uncooked rice in rice cooker or in pot. Cook rice with stuff on top. Stir everything together.

Works great if you add a couple chipotle in adobo sauce with their sauce.

Deenz on toast. Don't get the ones in tomato sauce, get them in olive oil. Toast bread, find a big loaf of freshly made bread locally if you can, but regular white bread works. Put a lot of butter on your toast, tomatoes optional, they can be cooked or not, sardine on top.
One you open the can the intense, nasty fish smell comes out but don't trust it, deenz are delicious.

Find places that have a bar/counter, or go to places that get really crowded, start a conversation with the people that are next in line after you while you wait, and offer to share the table so that they don't have to wait so much. This one depends on a lot of things, doesn't work if it's couples or a family of 8 or another loner on their phone that doesn't want to talk, but it's a good move when you're trying new places by yourself, too.

The food industry always tries to hide old product with heavy flavoring--There is a reason, they suggest using tomato juice to bathe in if you get sprayed by a skunk.

I got my gals used to a high quality English flea comb as kittens--they LOVE it, and RARELY ever have gotten fleas, Regardless of how many dog owners who DON'T pick up after their "FurBabbies" are around me.
Since I moved away from the "Urb-Suburbs" 3 years ago, they haven't needed topspot at all.
As to the TOPIC:
Getting a cheap $20 rice cooker is a boon--you can make more than just rice.
My favorite cheap go-to is lentils and rice:
1 Pintglass jasmine rice
1/2 Pintglass lentils(sorted and rinsed beforehand, easiest on a paper plate in 1/3nds of the whole volume)
1-2 T. butter
2 Pintglasses water
Seasonings to taste:I use
1T Gar. Pow.
fresh ground Black pepper
1 T poultry seasoning(beau monde) ~or~
1 T. Italian seasoning.
any kind of meat; Chicken, Deens, etc...
~or~ Cheese if I have it.
I can't eat this for 3 days in a row, but it does pad out the week cheaply enough.
Also, ask any local stores where you buy food where their discount/Clearance sections are.
Almost all of them have them (I haven't seen one at Aldis,) and they are often hidden.

Another good cheap food helper is of course buying basic staples and having a good assortment of herbs and spices.
My go-to now is biglots, since they have good sized spices for a dollar apiece.

Nachos are easy to make sloppa. There's also shepherds pie which can be made in bulk and frozen. There's pizza where you can prep and make 50 doughs at once and leave them in the freezer, then pop them in the oven with toppings when you're hungry.

I chop a bunch of cabbage + other two vegetables, lately carrots and spinach, store them in the refrigerator, ready for use anytime. Cabbage tastes like shit when raw, you have to either ferment it or sear it. Sear it all until the cabbage is tasty, i use lard, mix three eggs, add some cheese perhaps, make an omelette with 3 eggs. Boom. Tasty, fast, and healthy, that's what i have everyday for breakfast. Protein and veggies, just need a carb source, i eat tortillas since i'm Mexican, but bread or leftover pasta would work just fine too.
