I make a lot of bisques. Bitches love bisques.
Get a scale, put a pot on it and add:
100g of vegetable, 100g onion, enough stock cube (or stock powder) for 500ml stock, 7g instant rice, 10-15g cooking fat (oil, lard, butter etc) and enough water to add up to 500g total.
Set on the heat, boil the shit out of it until the vegetables are soft then blitz smooth and stir in a handful of fresh parsley (sweet and/or bitter) and/or dill and serve.
If using a leafy green as the vegetable, like spinach, blanch and shock 100g of it first. You'll use the pre-blanched weight in the above "recipe."
For tomato or carrot bisque, you can swap out 150g of the added water with its corresponding juice IE tomato juice for tomato bisque; carrot for carrot.

I make a variation of australian pumpkin soup that I find delightful:
>1 vidalia onion
>1 apple, your choice of variety
>as much garlic as you like
>as much pumpkin as will reasonably fit in your blender
>cinnamon, nutmeg, ginger, cumin, paprika, salt, pepper, feel free to use real ginger root or a piece of cinnamon if you want instead of the powdered
>bacon
>Whole milk
Directions:
>cook bacon in designated pot, cook until desired doneness. I prefer crispy for this recipe.
>remove bacon, to be chopped later. Cook onions and garlic until soft, add ginger if using root and add apple.
>Once all is cooked well, let pot cool, add milk and pumpkin, bring to boil, once pumpkin is soft you can turn off the heat. Stir throughout, naturally.
>you can either let the food cool or immediately move it to blender, depends on preference. Puree until completely smooth.
>pour back into pot, raise temperature once more if cooled, add bacon and season. You may also at this point add other garnishes: collard greens, cranberries, crushed pecans, coconut shavings, popped popcorn, in any combination. Unrequired.
I'd avoid the other garnishes for your pappy obviously in this case.

Most vegetables can be turned into soup, having a chicken stock base is the most versatile. Beef stock may work but depends what you're making.

You can make a blended soup with any of these:
Potato
Carrots
Peas
Broccoli
Cauliflower
Pumpkin/squash
Sweet potato
Leeks
Onions (use beef broth and caramelised onions for french onion soup)
Beans (black bean, butter bean)
Lentils (puy lentils, red/yellow lentils)
Corn
Mushrooms (usually requires cream)

If your dad can't take too much dairy, soups can be thickened with a slice of bread or a potato blended in.

If he doesn't want to eat thick soups, cook some bone broth. Nutritious and easy to eat.

If it is just simply atrophy of the throat muscles due to prolonged lack of use, you would need to go through speech and swallow therapy to regain function, although it may not be back to full. If it is stricture formation and general fibrosis, it's harder for full treatment and there are conflicting data about amifostine and glutamine use. Humble, easy, cheap, fast and excellent. No need for potato.

Tomatoes and courgettes are still in season, as are green asparagus (they make a great soup with coconut cream). Tomatoes pair well with all kinds of berries but I doubt your old man is in the mood for that right now.

Mushroom season is now, not in October. Also: peak pumpkin season is now, not end of October. Pumpkin in combination with curry (curry doesn't have to be spicy) makes for wonderful soup.

Don't forget fish and seafood either. Gentle in taste, ready in no time, easy to chew and most are peak quality in October (scallops, shrimp, mussels, sole, turbot) wait for cod until early spring

If there are structural abnormalities, intervention can be done by doctors. I'd check in with the medical oncologist first, who should be checking annually anyways, and then if it's just pure postradiation fibrosis, then nothing much other than supportive care can be done.
Speech and swallow therapy are specialists who deal with obviously speech and swallowing functions. They look into if it is a structural or a functional issue and then recommend interventions/therapy depending on what they evaluate. They are not doctors, though. They can be contacted through a consult service from your PCP or oncologist.

The carers we got for my Grandma who laid in hospice for a while where palliative care and thats basically what they did, yeah.
Its not really cheering up (you're in hospice, you WILL die - everyone is aware of it) its more like taking extra time for the patient, talking to them, etc. all the things you can't do in a regular hospital.

A friend of mine worked in a hospice for a while and she had no medical training in the slightest. All she did was basically spend a lot of time with old people.

From experience, all the vegetable creams, bisques and potato leek soup are always good. Honestly all of these look worthwhile, you can fuck them up if you overcook the vegetables or fails steps like boiling miso or not browning onions enough for them to caramelize, but it's hard to fail with soups.

Pig meat doesn't go well in soups or stocks because of its fatty taste. With some exceptions like pea soup and Belgian/Northern French hutsepot/hochepot (with green cabbage, turnip, potato, carrot, parsnip)

Add your parsley at the end. Simmer onions and garlic, don't saute them, bake your mushrooms on high heat, add chicken stock first, then cream. You're far better off adding an egg yolk to your cream if you want to thicken your soup.

Why blend mushrooms and pumpkin when they're in season? If you cut them in a fine brunoise, prepare them properly and serve them in chicken stock they'll actually shine. I'd add curry, not cream in that case.

If you really want a velouté just make a roasted pumpkin one, add all the other elements you mentioned afterwards. Pic is a simple pea velouté prepared that way.

Potato leak is one of my favorites and if you want you can upgrade it to Viccysoise by blending it with cream. I add a little milk or cream to it for color anyways and don't bother blending etc. as I like it hot with nice big slices of potatoes. Sounds like pop might like it cool and blended. You got options with this dish and it makes a great base recipe for other soups or stews using potatoes and leeks.
