Fuck mainstream curries with like 20 different spices in them. When I make curry, I want to use only the essential spices as to amplify the flavors of the highest quality ingredients. My recipe includes:
Fresh tumeric
Fresh ginger
Fresh chilis
Garlic
Corriander
Star Anise
Black pepper
Cinnamon stick

I don’t fuck with cumin, fenugreek, mustard seed, or bay leaf. I don’t want funky, pajeet-stank flavors that overpower and muddle the flavor of the other ingredients. I only use the ingredients that touch on a particular taste profile, nothing more. Why don’t more people do this? I feel like I’m revolutionizing a tired old dish.

I like to cook curries with just a fresh paste like that too. Often with coconut cream. Lots of fresh herbs. A turmeric/ginger/chilli/garlic paste will also be good if you season it with fish sauce and finish to balance with lemon juice to make it jungle asian spec.

you've likely not eaten much good actual indian food if you think their curries are boring or samey though. I cook a lot of curries and I think it's the one cuisine that real thing btfos me.
