No idea which are available in english, though.

I thought this book was a good intro to the region and showed how history, trade and the climates of the regions influenced a lot of the dishes. I need to check out Pokhlyobkin now.

okay i'm not going to turn this thread into another fucking /pol/-fest, so this is going to be my only reply about this
(american) black people have no actual cuisine (they wash their fucking chicken with soap for fucks sake)
indians spice their food to the max so you can't actually taste the food (to hide the rotting/fermenting taste in the past, i'm not joking)
the chinese make soup using a variety of different exotic animals and otherwise use whatever mystery meat (of which most don't even taste that good) they can get their hands on
i could go on, but you get my point
cooking is something that a civilization can only afford when they have a surplus of food to experiment with
guess what races have reached that point in time far before any other?

US cuisine overall is too bland. There is an urban legend about too much salt being bad for you, so no dishes are salted properly. I miss distinct flavors so much... If there is a chocolatey sweet thing, then it is overbearingly sweet first and chocolatey second to get you to eat more. Even potato chips seasoning is way too mild to encourage eating too much of it. You must become proficient in seasonings and sauces if you want to have any semblance of flavor.
