The only country I've ever been in where mushrooms are cheap is Japan. In America, if you want to buy any mushrooms that aren't white button mushrooms (which are grown in poop), you have to be willing to spend like 20$ a pound or some shit. Japanese supermarkets will have at least the six following varieties for extrely cheap, like 1-300yen per clamshell package:

>enoki
>nameko
>maitake/hen of the woods
>shitake
>cloud ear/wood ear/jew's ear
In america it's literally just button mushrooms or portobellos (aka large button mushrooms) and maybe oysters if you want to spent a billion dollars.

Chickpeas are nice and have a meat like taste and texture without the bitter poison that most stemmy vegetables have
