Can I use a wok decently on my regular north american gas stove?
I'm not going to install a jet engine in my kitchen to cook over like chinese people but I do want to try their recipes

>> No.18311737

you dont need to install one, just get a high btu burner and connect it to a propane bottle outside

I have a jet burner that I use outside, works pretty well.

hmmm maybe that could work for me but i'd have to have all the mis en place which would be a pain outside or else i'd be running back inside every 2 minutes
Do chinese cooks save oil to re use later or do they just dump it?
every wang gang video he uses like $5 worth of oil and then just dumps it out

Just build a fire and set up a metal holder. The Chinese empire has been around longer than Christ, how do you think they did it before burners?
Or do you not own land to make a bonfire?

You have to have all the ingredients ready regardless of where you do it dude, just get a small table to put them on outside.
The oil is poured back into a container through a strainer everytime, he doesn't toss it.
That would make ancestor cry to waste so much.

If you want to use a fire to use a wok look at the little charcoal burners Thai people use.
Importfoods sells them for relatively cheap in the USA.

Just get all your seasoning and pre cut stuff on a little wheelie cart

If it ain't a bitch to bring outside you can just bring it in and out and use it indoors and outdoors

this is what I do

electric stoves actually get hotter but you need a flat bottom wok and it's a lot harder to gauge temp

>> No.18312003

wok hei is kind of a meme
if you can achieve it, do so, by all means
but your food will taste fine either way

>> No.18312010

That's like saying grilling is a meme

>> No.18312031

>>18312010
yeah
you could take all the ingredients you were going to throw on the grill and cook them in an oven instead and it would still be a perfectly edible meal, albeit not the same
my point was less 'wok hei isn't real' and more 'if you don't have a huge burner, don't let that stop you from making the food you want to'

grilling is a meme
if you aren't smoking meat there is literally zero difference between propane grilling and pan cookling
