New Yorker here. There's a shop in my neighborhood called Myers of Keswick that makes and sells a bunch of different British meat pies.

So far I've tried the pork pie, steak and ale, chicken and leek, Cornish pasty, and the sausage roll. Loved em all. They're priced at a premium but you'd expect that.

Been experimenting with what to put on them, brown sauce, Colman's, Branston, etc. Even tried Geo Watkins mushroom ketchup, that stuff is great.

We have a rice pie in turkey. Generally also contains chicken meat. The rice is cooked with various spices and dried nuts. The outer shell is pie crust, the same as meat pie crust. It's rarely cooked at home because it takes time and effort.

You can just cook the rice like this and eat it without the "pie" as well, and it's amazingly delicious.

Unironically, the best diners in the US are in northern New Jersey or New Mexico, so you're shit out of luck on that front.

Embrace BBQ. Virginia has a few different varieties floating around the cities, but inferior Carolina styles are most prevalent. Find Memphis style if you can, settle for Kansas City style.

DC is your best bet for finding British style meat pies, but pot pies and empanadas abound where you live, undoubtedly. The proper crust is an art, so you gotta be willing to try inferior versions, but you'll find a good spot.

I also forgot to mention chicken gizzards and hearts are common even in grocery stores. So are beef tongue. Turkey organs are kind of seasonal. Most animal feet and necks can be found too but I wouldn't count that as offal.
