The quality of the coffee really depends a lot more on the beans you use.
You could get the most expensive, high end machine but if you only got shitty bottom shelf beans you'll end up with terrible coffee. That's the problem with the coffee at my workplace. They got some pretty expensive machines, but the beans are hot garbage.

Gosh, I haven't seen a coffee sock since my family left SEA. We didn't use them, but it wasn't uncommon to see one at friends' flats. We mostly used either a moka pot or a South Indian coffee pot.
I can't imagine the brew would be bad if you used good quality coffee and washed the sock immediately after use.

Honestly if you're really serious about coffee you need to move up to a truckmount option. Anything less than about 30 horsepower is kind of a meme
