Celery is considered a negative calorie food (though that's not really true). Empty calories typically refer to shit like refined sugars. They're full of calories but aren't nutritious and wont give you energy throughout the day. Alcohol is also a perfect example.

In contrast, fibers (like the name suggest) have longer molecular chains and take longer for your body to break down, giving you a moderate amount of blood sugar for a longer period of time.

Real answer, there are two types of fiber hard and soft. Hard is undigestible plant fibers that essentially scraps your intestines and allow for healthier digestion overall. That's normally stuff like the skin or maybe celery. Soft fibers help regulate your insulin levels. So in the case of fruit the majority of energy is stored in the form of glucose I.E. sugar. The pulp is more or less made of soft fiber so it helps your body digest the sugar in a healthy way rather than just drinking pure sugar water which is what juice essentially is without pulp. It's worth mentioning even with pulp juice is a relatively unhealthy way to consume fruit. Ultimately you should consider just eating a whole fruit instead of drinking juice. But I'm also sure there are worse things you could drink. Besides I'm not a sign I can't tell you what to do.

Now if you don't have a balanced diet, chances are that you'll be getting all the energy (calories) you need, but not much of the other stuff. It's pretty much a calorie/other nutrient ratio, with foods that have high calories to low nutrient content being "empty calories".
