Japanese food can be overly repetitive. Most of the dishes are inexpensive and simplistic by design (Japanese value simplicity above all else). From what I've read, unless you're a Japanese native or have assimilated into Japan, then the food will taste the same every time. There are very subtle differences in the food only an experienced eater will notice, otherwise it'll taste the same. The food is only noticeably different in locales outside of Japan, though.

Because sometimes you want to get away from the endless mirepoix-base / stewed / battered / deepfried / sauteed / curried etc etc and just have a simple fish and rice.

same reason to have a simple steak with S&P, or an easy grilled salmon and lemon, or simple soup and toast. you want a no-frills, minimal-ingredient experience.
