technically it's real bread, but there's a few things to consider
sourdough culture tastes sour, so nowadays, if the bread's being made using a strong enough flour, a good baker's yeast is typically preferable
you might argue that using sourdough culture makes the bread more flavorful, but it actually just makes it more sour, and if you find some bread that tastes especially good the reason is most likely the flour, followed by additives
additives might include (evo) oil, honey, spices, mushrooms, olives, herbs...
amd obviously, whatever the ingredients, the baking process has a big impact on the consistency of the bread, and partly on its taste
the more you knead the dough the more gluten will form (if it's a wheat bread anyway), and the more chewy the cooked load will become, this being only an example of the various ways in which you can affect the finished product during the preparation
so apparently you don't even know the basics of bread baking, which in turn makes me doubtful about whether you'd be able to tell good bread and shit bread apart

It's almost too filling for me, and yeah it ends up going bad before I can finish it all. The pain of living with two other people who have widely different diets.

Americans need everything to taste 1000% the way they think it's meant to taste. Espresso must taste like pure bitter coffee beans or it's not real to them, the hot sauce and ipa craze where everything must taste disgusting to appear authentic.

Sour dough is no different. I tried american sourdough and it was like going down on one of their women. Same reasons super hero movies and huge cars are so popular there. Everything has to be juiced up to meme proportions to seem authentic.
