How do you usually prepare bacon?

>> No.18253677

wire rack in the oven until it looks done
not sure why you'd do it any other way

>> No.18253686

In a pan, flip it a few times so it doesn't burn, remove when crispy. Not sure why you'd do it any other way unless you're cooking like 20 pounds in which case it makes more sense to put it on a sheet tray in the oven, which both takes longer and is more inconsistent.

start in a cold cast iron pan with oil and cook over low heat

that way more fat renders out and it doesn't burn

People often over-crisp/burn and under-render bacon. It should be cooked slowly.

I actually have the opposite experience, I've recently switched to cooking it in the oven, and it's perfect everytime.

Also the bacon fat is one of the main reasons to cook bacon. If you're not saving/using it then you fucked up.

If you put a full sheet of bacon into your oven and it all comes out perfect congratulations. You have a really good oven. Usually there's going to be hot spots and you'll have to rotate the pan and pull some pieces earlier than others. Yes, if you cook it in a pan you still have to watch it and turn the slices, but it takes half the time and you have a lot more control. That anon also suggested putting the bacon on a wire rack, which means it wont get fried in its own fat, which is kind of the entire point (and also will make it cook more evenly). Restaurants use ovens to cook bacon because they do a shit ton at a time. I can only imagine the idea of using the oven at home to cook bacon must have come from some youtuber who just had to do it differently as clickbait.

I'm leaning more and more away from cooking bacon on my carbon steel and more into just nuking it in one of these. It saves the grease if you like to keep it like I do too and doesn't smoke up the house.

Skillet then I pour the bacon grease into a grease keeper / catcher then put it into my refrigerator. The cast iron skillet is easy, that's just a simple wipe down and from experience I just throw the towel or whatever I use into a kitchen sink. That's because once I had one start smoking and almost start a fire in a garbage can.
Once the bacon is done, pour the grease into a grease keeper sort of thing and put it into a fridge for when you need the bacon grease.
The strainer on the things keeps bits out that don't mix well with the grease or give it off flavors, those clean up real easy as long you let any leftover grease settle on the strainer parts.
Hot water does wonders.
Lo and behold, bacon grease for multi use!
Oh, make sure to not buy a big one like I did, I way overpredicted how much I'd go through in a year and well the small one is best.

Don't you cover it with something to prevent spattering in the oven? Then you have the paper towel clean up, even worse because it's all over an oven and you're still loosing the nice bacon grease.
