Clean as you go, my man. First thing I do once my sink is clear from rinsing veggies, etc is fill it up with soapy water. As soon as I'm done with a utensil, it goes right into the sink. When you have some downtime (pasta's boiling, meat's cooking, whatever), wash some dishes.

Also, my life was drastically improved by just limiting how much silverware, china and glassware I kept out. Most of my shit is in a box somewhere and I take it out when I have company. Otherwise, a setting for 2 is all I really need, so even if I get every dish dirty it's less than a sinkful.
