That leaves kimchi, tofu, and macaroni salad. Forget about the macaroni salad. I always pick up some kimchi at the Asian grocery store and just view it as another pickle in my fridge to snack on. The tofu I picked up on a whim, and used some to make a quick curry dish a few nights ago, and then made some miso soup yesterday (miso paste is like $5 for a tub and will literally last a year in the fridge). Pic related is miso soup. It used the same tofu, onion, green onion, and hondashi.

People always suggest this, but I don't think realize that that's actually more daunting to people who don't cook regularly. It sounds like a big project that needs to be planned, and there's going to be a bunch of dishes, and then you have to freeze it, and plan ahead to pull it out the day before when you want to eat it, and... I know it's technically less work, but just making a simple meal, cleaning as you go, and being done with it is probably a lot more approachable for a lot of people, and starting with smaller projects will give you more confidence compared to making a big batch of something and having to worry that it wont turn out good because you don't know what you're doing.
