I was recommended this gumbo recipe by someone on here. Im going to make it tonight or tomorrow, buying the ingredients today- except, I think I may substitute oysters for mussel meat and not do the amber beer, and add okra. How much will the changes I’m making ruin this? I’m brand new to being interested in cooking, trying to expand my horizons.

So far so good, I’ve followed the instructions to a T apart from adding okra. Simmering for another hour, then adding the seafood I bought. Local caught fluke (flounder), jumbo shrimp crab meat and crawfish tails. Will season with a blend I made.

Seafoods added in. Smells and looks really good. I know the roux could’ve been darker but I actually prefer it a little light from what I tasted in New Orleans when I was down there.

There’s two basic styles of gumbo. The native style uses okra as a THICCner. The french invaders use a roux.

You can do both but it’s a dangerous game and you’re likely to make something that has the texture of a paste if not oatmeal

I wanted it to come out southern sloppa really. There’s no amber beer or oysters in it, and I added crawfish and okra. Lump crab meat instead of gumbo crabs. That’s basically it, everything else I did the same. I used 4 cups seafood stock and 2 cups chicken stock because I didn’t have enough of the seafood, that’s another edit I did. Other than that followed the recipe exactly. Turned out delicious which is what counts

That's where all that meat strings comes from instead of crab chunks.
Also not having the crab shells as well as less seafood stock is a double whammy in reducing the flavour profile
You could probably put some smoked sausage or ham hock to compensate if you don't care about the finished product being a specific thing

it'll improve it immeasurably. emeril is from massachusetts and knows very little about louisiana cuisine. the basis of his fame is excellent self-promotion while making shit for tourists who don't know any better. hence stupid northeastern ideas like putting mussels in gumbo, and even stupider ideas like not putting the signature ingredient - gumbo - in gumbo.
