>nooooooo you have to use andouille sausage if you're making gumbo!!!

I'm not going out of my way to find an obscure overly expensive sausage that is literally just regular pork sausage with a bit of cajun seasoning sprinkled inside, i'll keep using chorizo thanks

too strong.

Personally I go with 'rookworst'. Cheap and similar to andouille.

Aidells sells andouille links in a 5 pack on the regular. Johnsonville has "New Orleans" in big words on their andouille sausage. Look for them near the hot dogs. Btw, it's TASSO HAM they are trying to get you to buy, which yes, can be obscure and hard to buy the further out from Louisiana you live.
But rather than chorizo, which is really cumin heavy, buy some pecan smoked sausage like Uncle John's pride, Conecuh or a texas brand, or even smoked all pork kielbasa. But, no, it's not chorizo.

>nooooooo you have to use andouille sausage
said no one ever, faggot. any smoked sausage is fine, it's just that andouille is the most common smoked sausage in that part of the country.

Andouille sausage isn’t obscure. Its everywhere. I’m a cajun transplant in the PNW and that shits at walmart near the hotdogs. Its not like we are forcing you to use boudin in gumbo

Andouille is used not really for the spice but for the smoke. You can use any other basic smoked pork sausage and you'll be good. Kielbasa would be a much better choice than chorizo.

New Orleans chad here. Please come and enjoy our food and let my fiancé and I have you over for dinner. I will be making pierogi and we will have apple turnovers for dessert. King cake if your here for festival. We can walk to Audubon after and feed the turtles and judge the hot broads. See y’all soon!

LA fag here, i actually use kielbasa more often than andouille because there is less of a discrepancy between shitty and good kielbasa vs shitty and good andouille.

do you make the kingcake from scratch?
if so, do you use a water roux/tangzhong?

You dont have to use andoille sausage whatsoever when making gumbo, anyone who does is trying too hard

Just get some smoked sausage from your local butcher and you're set

Recipe purists are the biggest midwits. They care more about doing it the way they've been told than filling their stomach which is the entire point of the recipe in the first place.
