I totally agree. But there was too much grease/liquid since I used more meat than usual. I don't know why I didn't just drain the grease so I could char it a little. If I tried to cook out the liquid it would of overcooked the meat.

I used to use mayo, lime, garlic, onion, chili, and cumin, and make a sauce or whatever you'd call that to cook them in. I never marinated them though. Just cooked it immediately after mixing with spices.

Start with a larger and hotter pan and don't crowd it. You'll get better browning that way.

By hotter I mean preheat it before putting in your meat. If it's not sizzling when you put in your meat, it's not hot enough.
