Monosodium glutamate (MSG), also known as sodium glutamate, is the sodium salt of glutamic acid. MSG is found naturally in some foods including tomatoes and cheese in this glutamic acid form. MSG is used in cooking as a flavor enhancer with an umami taste that intensifies the meaty, savory flavor of food, as naturally occurring glutamate does in foods such as stews and meat soups.
MSG was first prepared in 1908 by Japanese biochemist Kikunae Ikeda, who was trying to isolate and duplicate the savory taste of kombu, an edible seaweed used as a base for many Japanese soups. MSG balances, blends, and rounds the perception of other tastes. MSG is commonly used and found in stock (bouillon) cubes, soups, ramen, gravy, stews, condiments, savory snacks, etc.

98:2 MSG and I+G ratio. 1/2 TSP per lb meat. Can do 1/4 TSP with 1/4 TSP salt (I use pickling) or less depending on taste.

The salt content of fast food is so high because it is already loaded with MSG. Adding even more will make you see spots, get migraines, and all that shit associated with consuming way too much salt. This is why MSG got such a bad rep in the first place. Chinese food places going overboard with MSG.

MSG is much like salt, it's a pure example of a fundamental taste, umami. msg is pure umami like how salt is obviously pure saltiness. umami is a taste that goes well with savory flavors (pretentious douchebags use the word umami instead of savory but they're wrong and gay as both are separate tastes) so it goes well with meat and cooked vegetables. it has some inconclusive links to some health issues but likely is much like salt where moderation is key. it is fucking superb in small amounts with meat I'd strongly recommend it for your next spice rub
