Depends on what they are saying. If they don't like my cooking because they are a picky eater or just don't like the type of food I cook, then I will ignore them. If they are someone I respect and it's valid criticism I might take it into consideration the next time I cook.

Learning experience but I also would not plan to make any changes to my cooking because I cook for three people regularly and we all think it's fine.
I think as far as home cooking goes you're always going to meet someone who won't like it. In my case I've had relatives whose taste buds have been ruined by fast food who would never be able to enjoy most of my cooking, or simply don't like the cuisine at all. I'd be willing to cater to them in some situations but I'm definitely not changing my usual.

I'd get defensive.
Never tell someone that you don't like their cooking unless you paid for it.
You can offer suggestions, mention other similar dishes or techniques, and dance around the topic a million different ways. But you never tell them you don't like it.

I once made a pumpkin ale for a friend's Halloween party. Even grew the pumpkins myself for it
A "friend" of mine poured himself a glass and said:
"Oh hey, pumpkin ale! I know what do with this!".

And then he poured it down the sink right in front of me.
The only reason I restrained myself from killing him on the spot was that I'm pretty sure he legitimately has learning disabilities and just imitates what he sees online.
